Tonight's vegan dinner: roasted brussel sprouts w/garlic & walnuts, stir fry string beans & broccoli and lebanese rice w/soy crumbles.

For tonights meal, I whipped up a simple dish of:
-roasted brussel sprouts w/garlic and walnuts
-stir fry vegetables (string beans & broccoli)
-lebanese rice variation (made w/vermicelli and Trader Joe's vegan soy
meatballs)
Prep time was 5 minutes and total cooking time was under 40 minutes!
